Chicken salad with parsley vinaigrette

Ingredients:

1. Salad

2. Chicken breast

3. Baby spinach

4. Red kidney beans (precooked)

5. Parsley

6. Olive oil

7. Balsamic vinegar

8. Garlic

9. Lemon juice (freshly squeezed)


• First, you're going to cook the chicken in a hot pan. Season it with: paprika, chili powder, dry thyme, cumin powder, onion and garlic powder, dry rosemary, turmeric powder, a pinch of salt and black pepper. Cook it until golden.

• Place your salad, baby spinach and kidney beans in a large bowl. Add your chicken to your dish. Now you can add parsley vinaigrette.

•Parsley vinaigrette: pulse parsley, olive oil, lemon juice, balsamic vinegar, and garlic in a food processor until well blended. Season to taste with salt and black pepper.
