Lemon Curd Chocolate Tart

Ingredients:
1. Flour
2. 4 eggs
3. Unsalted butter
4. Granulated and powdered sugar
5. Vanilla essence
6. Rum essence
7. Salt
8. Lemons
9. Dark chocolate
•Tart dough: in a bowl add flour, powdered sugar, a pinch of salt and cold unsalted butter. Form the dough and refrigerate it (1-2 hours)
•Lemon curd: add lemon zest, granulated sugar, vanilla and rum essence to a bowl. Add 4 egg yolks and lemon juice. Add a pinch of salt and cook it on low heat until it becomes creamy. Add unsalted butter to your lemon curd.
•Bake the tarts for 25 minutes (180°Celsius)
•After they're baked, add dark chocolate. Second layer: lemon curd.
●Meringue tarts: add egg whites into a bowl. Beat them well with a mixer. Add sugar until the meringue is formed. Add the meringue to your tarts and bake them for a few minutes at 160°Celsius.
