Protein poppy seed muffins with banana&blueberries

Ingredients:

1. Oat flour

2. 2 eggs

3. Granulated sugar

4. Coconut oil

5. Oat milk

6. Poppy seeds

7. Baking powder

8. Salt

9. Vanilla protein powder

10. Vanilla essence

11. Banana and blueberries


•In a bowl add 2 eggs, mix them well with a mixer. Add coconut oil(melted), granulated sugar, oat milk, vanilla essence and a pinch of salt. Mix it well together. Add oat flour, vanilla protein powder, baking powder and poppy seeds. Place a little bit of your batter into your baking tray.

•Mash 2 bananas. Add the mashed bananas into the muffins. Cover them with more batter.

•Add the blueberries to your muffins and cover them with more batter.

•Bake your poppy seed muffins for 20-22 minutes (190°Celsius).

•Sprinkle coconut flakes on top of them. (Optional).
