Pumpkin pie

Ingredients:

1. Pumpkin puree

2. Milk

3. Heavy cream

4. Sugar

5. 4 eggs

6. Seasoning: cinnamon powder, nutmeg powder, cloves powder, a pinch of salt

7. Vanilla essence

8. Dough: flour, 1 cup of sugar, a pinch of salt, 1 cup of iced water, cold butter


□ In a bowl add flour, 1 cup of sugar, a pinch of salt and cold butter. Crumble the butter into the flour. Add 1 cup of iced water until you get a dough. Place the dough into the refrigerator for at least 1 hour.


□ Pumpkin filling: heat some milk and heavy cream. Add cinnamon powder, nutmeg powder and cloves powder. Cook it for 6-8 minutes. In a separate bowl add 4 eggs, a pinch of salt, 1 cup of sugar. ADD the pumpkin puree. Mix well together. Pour the heavy milk mixture (when it's warm, not hot) over the pumpkin filling. Make sure you don't cook the eggs. Mix well together.


□ Add some heavy weight on top of your pie crust and bake it for 10 minutes(220°Celsius). Make sure you cover the edges.

□Remove the heavy weight. Bake it again for 10 minutes (180°Celsius).


□It's time to add the pumpkin filling. After you filled the pie crust, bake the pumpkin pie for another 45 minutes (160°Celsius).
